Parmesan chicken strips

Ingredients:
 
Parmesan Chicken Strips
1 Boneless chicken breast
1 egg white
Pepper to season
1/2 cup freshly grated parmesan
 
Directions:
 
  • Cut the chicken breast in half
  • Put the two pieces of chicken between two sheets of plastic wrap and beat with a mallet or rolling pin until 1/4 inch thick. 
  • Remove the plastic wrap and cut the flattened chicken into small strips.
  • Beat the egg white with a little pepper until frothy.  Spread the parmesan onto a plate.  
  • Dip the chicken strips in the egg white and roll in the parmesan to coat.
  • Preheat the broiler and line a broiler pan with foil.  Broil the chicken strips for 2-3 minutes.  Turn over and cook for 2-3 minute more until the chicken is cooked through.
