Cauliflower Cheese Soup
Ingredients
- 1 Tbsp butter
- 1 large onion finely chopped
- 1 large cauliflower, leaves removed, cut into florets
- 1 large potato, peeled and cut into chunks
3 cups of vegetable broth - 1 3/4 cup milk
- Salt and pepper
- 1/2 cup of grated sharp cheddar cheese
Directions:
Melt the butter in the saucepan. Sauce the onion for about 5 minutes. Add the cauliflower potato, broth milk and seasonings. Bring to a boil, then reduce the heat and leave to simmer uncovered for about 30 minutes until the vegetables are soft.
Remove from the heat and stir in the cheese and melted. Whiz in a blender to a make a thick creamy soup
